While I know many people out there are under the impression that cooking
salmon is very easy, that could not be further from the truth. The truth is that salmon is actually pretty difficult to cook and there are many people out there that tend to make a bunch of mistakes during the cooking process. In this chapter you will find some of the most common salmon cooking mistakes to avoid so you can prepare that salmon dish you have always envisioned.
Mistake #1: Yanking Out the Pin Bones
While it is certainly true that you should remove the pin bones of the salmon, you should do it carefully and gracefully to avoid making any mistakes. Yanking out these bones will only rip apart the delicate flesh of the salmon which will not give it that appealing and tasty look that you are going for.
I highly recommend using a pair of tweezers to remove the bones. When you do this remember to carefully pull out the bones in the same direction to
which the pin bones are facing. This method will help keep your salmon
intact.
Mistake #2: Ripping Off the Skin
This is one of the most common mistakes people tend to make when cooking
salmon, especially first timers. This is one mistake that you should definitely avoid making. My advice is to keep the skin of the salmon on your fish as it
will provide a safe layer between the salmon and your searing hot pan or
grill. I also recommend cooking your salmon with the skin side down first to give the skin a chance to crisp up. Once your salmon is fully cooked and crispy, then remove the skin.
Mistake #3: Poaching Your Salmon in Plain Water

• Tbsp. of Chives, Finely Chopped
• ViCup of Honey Mustard, Your Favorite Kind
• ViCup of Brown Mustard
• Tbsp. of Black Peppercorns, Ground and Finely Crushed
• %Ounces of White Peppercorns, Ground and Crushed
• Tbsp. of Salt for Taste
Directions:
. First whisk your honey mustard, at least 14 cup of your brown mustard and vinegar together in a small sized bowl. Stir thoroughly too evenly combine.
2. Add in your salt, white peppercorns and chives. Fold gently to combine. 3. Next line a large sized baking sheet with some paper towel. Set aside for
later use.
4. Next combine your thyme, chopped onions, black peppercorns, parsley and
dash of salt together in a large sized pot. Squeeze in your juice from your pineapple into your pot before adding your pineapple halves. Then add in at
least 3 quarts of water.
5. Set over medium heat and bring your mixture to a rolling boil. Once boiling reduce the heat to a simmer and allow to cook for ten minutes.
6. While working in batches poach your salmon by using a sieve, making sure to shake the sieve every 15 to 20 seconds as it is poaching. Once done
place onto your baking sheet and allow to cool.
7. Once done poaching your salmon combine your tomatoes poached salmon and at least !4 cup of your brown mustard and honey mustard together in a medium sized bowl. Season generously with a dash of salt and white
peppercorns to your liking.
8. Cover your salmon and allow it to chill. Once chilled remove and serve on top of a bed of tomatoes. Serve immediately and enjoy!

Directions:
. The first thing that you will want to do is carefully scoop out the yolks from your halved hardboiled eggs and scoop the yolks into a large sized
bowl.
2. Next finely chop up at least 4 egg white halves and add it into your yolks. 3. Then add in your heavy cream, premade relish, chopped chives, fresh orange juice, dash of salt, dash of black pepper and premade horseradish. Mash your mixture with a fork until smooth in consistency.
4. Then arrange your egg white halves neatly on a large sized serving platter. Then spoon some of your egg yolk mixture into your halves, allowing it to
mound over slightly.
5. Once done cover your deviled eggs with some plastic wrap and place into your fridge to chill.
6. Once chilled garnish each of your deviled eggs with some of your smoked salmon and serve right away.

!4 Cup of Sesame Oil
Directions:
. First heat up your salmon oil in a large sized and heavy pot set over medium to high heat.
2. Then add in your chopped leeks, slices of waxy potatoes and minced garlic. Stir to evenly combine everything together. Season with a light dash of salt and pepper. Saute everything together, making sure to stir often, making sure not to brown everything too quickly. This should take about 15
minutes.
3. Next add in your tomatoes with their juice and your chicken stock. Stir again and bring your mixture to a boil. Once boiling reduce the heat to a simmer and cover your mixture. All your soup to simmer for a couple of minutes.
4. Then add in your salmon as well as some chicken stock. Allow to simmer
for an additional 3 to 4 minutes.
5. Season your oil with some more salt and pepper. Remove from heat. 6. Serve your soup with a drizzle of sesame oil and French bread slices and enjoy while still piping hot.

. Combine your salt, pepper and all of your spices together in a small sized bowl. Whisk thoroughly too evenly combine. Rub this mixture onto your
salmon fillet, making sure to rub it thoroughly.
2. Then preheat your oven to 400 degrees. While your oven heats up coat a large sized baking dish with a generous amount of cooking spray. Set aside.
3. Next spread out your onions on your baking sheet and place your salmon fillet on the top. Place into your heated oven to bake for at least 20 minutes. Once the salmon begins to flake off easily with a fork, it is done. Remove
your salmon and set aside to cool.
4. Next use a medium sized skillet and place it over medium heat. Add some
oil into it and once it is hot add in your garlic and allow it to cook for at least 1 minutes.
